“Undermine”- Nashville Soundtrack

I am having a hungry day. I want to eat everything. I think it’s just stress and emotional baggage and financial worries. But I thought I’d share a dessert that I love ever since I had it for the first time a year ago. The idea comes solely from my friend and registered dietitian-Torrie.

Perfect Pears with Honey and Vanilla Yogurt

If you have an after-dinner dessert craving, there is nothing better than taking advantage of seasonal offerings like pears.

You will need:

  • 2 medium pears
  • One vanilla bean
  • Plain yogurt (Greek is totally acceptable)
  • Honey

First- scrape out the caviar of the vanilla bean and mix it with ½ cup of yogurt. Place it in the fridge to marinate.

Then cut your pears in half and scoop out the seeds. A ripe pear will slice easily and a spoon should suffice to remove the seeds.

Place your pears on a foil covered baking tray and pre-heat your oven to 400 degrees. While on the tray drizzle your pears with honey.

It will look divine.

Then when your oven is pre-heated let your pears cook for 30-40 minutes until the honey begins to caramelize.

When your pear is ready take it out and let it cool slightly and then take your vanilla bean and yogurt mixture and place a tablespoon on each pear half.

It should look like this. Your pear will slice like butter, the honey and vanilla yogurt compliments the fruit. It’s a truly decadent “dessert” without a serious caloric intake.
